Chocolate Banana Mug Cake
Oh my goodness, I love this little cake so much. It has just the right amount of sweetness and can be made in only 5 minutes!
Ingredients:
1/4 cup mashed ripe banana, plus 2-3 banana slices, for garnish
1 egg
1 teaspoon avocado oil
1.5 tablespoons pure maple syrup
1.5 tablespoons unsweetened almond butter
1/2 teaspoon pure vanilla extract
1.5 tablespoons coconut flour
1 tablespoon arrowroot powder
1/2 teaspoon baking powder
1/8 teaspoon fine sea salt
1.5 tablespoons mini dark chocolate chips
Instructions:
In a large microwave-safe mug, combine the mashed banana, egg, oil, maple, almond butter, and vanilla and mash with fork until smooth.
Still using the fork, add in the coconut flour, arrowroot, baking powder, and salt and mix until smooth.
Stir in the chocolate chips.
If the batter reaches higher than halfway up the sides of the mug, divide the batter between two mugs.
Microwave on high power for 1.5-2 minutes. The cake is ready when it is puffed, feels set to the touch, and spongy.
Let the cake cool for 3-5 minutes, then top with banana slices and a few chocolate chips and enjoy!
