GF Pizza Crust
This is the best gluten free pizza crust I’ve ever had. It’s no wonder it’s been our family’s favorite for so many years!
Ingredients:
3 eggs
1 cup canned light coconut milk
1/2 cup avocado oil
3 cups tapioca starch
1/4 cup coconut flour
1 tablespoon baking powder
1 teaspoon sea salt

Preheat oven to 350 degrees. Like 2-3 baking sheets with parchment paper.
In a medium sized bowl, combine the eggs, milk and oil and whisk until well combined.
In a large bowl, mix the tapioca, coconut flour, baking powder and salt.
Combine the wet and dry ingredients by pouring the wet mixture into the large bowl with the dry mixture. Whisk to combine. It should form a thick but semi-liquid dough.
Separate the dough onto the lined baking sheets. Use a spatula to spread the dough into a circle, making sure to distribute the dough evenly.
Bake for 12-14 minutes, rotating the pans halfway through. Remove once the dough feels firm (but not browned), it reminds me of a bread stick texture at this point.
Let dough cool for 5-10 minutes before adding toppings.
Once you add your desired toppings, bake the pizza at 425 degrees on a pizza stone for 7-12 minutes.. For a crispier crust, put pizza directly on the rack.
