Crispy GF Waffles

These crispy on the outside, fluffy on the inside waffles are gluten free, dairy free and packed with all the flavor. Enjoy!

Ingredients:

  • 240g almond flour

  • 140g tapioca starch

  • 4 tablespoons maple or coconut sugar

  • 4 teaspoons baking powder

  • 1 tsp sea salt

  • 2 eggs

  • 272g canned coconut milk

  • 1.5 tsp vanilla extract

  • 90g coconut oil, melted

Instructions:

  1. Preheat Belgian waffle maker and lightly grease it with coconut oil (if needed).

  2. In a large bowl, combine the almond flour, tapioca, sugar, baking powder, and salt then stir to combine.

  3. In a separate bowl, combine the eggs, coconut milk, vanilla, and oil and mix well.

  4. Slowly whisk in the wet ingredients into the large bowl with dry ingredients. Mix until well combined.

  5. Use about 1/3-1/2 cup of mix per waffle. Depending on your waffle maker, each waffle should take 2-3 min to make.
