Sea Salt Chocolate Chip Cookies
If you know me, you know that chocolate chip cookies are my thing. And these cookies are my GO TO homemade cookies for any occasion. Slightly crispy on the outside, soft on the inside, with a touch of sea salt flakes on top.. doesn’t get much better than that!
Ingredients:
1/2 cup extra virgin coconut oil, softened
2/3 cup coconut or maple sugar
1 egg
1 tsp vanilla extract
2 1/4 cup almond flour
1 tsp cinnamon
1/2 tsp baking soda
1/2 tsp fine sea salt
1/2 cup dark chocolate chips
Flaky sea salt to top
Instructions:
Using a stand or hand mixer, mix the coconut oil and sugar together until smooth. Add the egg and vanilla extract and mix until smooth.
Add the almond flour, cinnamon, baking soda, and sea salt to the wet ingredients. Mix until well incorporated. Fold in the chocolate chips.
Wrap or cover the cookie dough and refrigerate for 1 hour. This doesn't need to be done, but it enhances the flavor and texture so it's recommended.
Preheat the oven to 350 degrees once you're ready to bake and line a baking sheet with parchment paper.
Using a cookie scoop, scoop balls of the dough onto prepared baking sheet.
Slightly press down each cookie and top with flaky sea salt.
Bake for about 10 minutes , or until just beginning to turn golden brown around the edges. Let cool on pan for 10 minutes then gently transfer to a wire rack to finish cooling.
