Simple Waffles
These waffles are light, fluffy and have won over my 10 year old’s tummy (which isn’t always easy to do) so it’s safe to say this is a staple recipe in our home! I make these over the weekend and store them in an airtight container in the fridge so I can easily heat them up for the girls before school (game charger for the busy mornings.) Of course the ingredients used are gluten, dairy and refined sugar free however you can substitute the flours or milk for your favorites!
Ingredients:
1 cup almond flour
1 cup tapioca starch
2 tablespoons granulated maple or coconut sugar
2 teaspoons baking powder
1 teaspoon sea salt
1/2 teaspoon cinnamon
4 eggs
2/3 cup unsweetened vanilla almond milk
2 teaspoons vanilla extract
2 tablespoons coconut oil, melted
Instructions:
Preheat Belgian waffle maker and lightly grease it with coconut oil (if needed).
In a large bowl, combine the almond flour, tapioca, sugar, baking powder, salt, and cinnamon, then stir to combine.
In a separate bowl, combine the eggs, almond milk, vanilla, and coconut oil and mix well.
Slowly whisk in the wet ingredients into the large bowl with dry ingredients. Mix until well combined.
Use about 1/2 cup-3/4 cup of mix per waffle. Depending on your waffle maker, each waffle should take 2-3 min to make and this recipe makes about 4 waffles.
