Veggie Packed Egg Bites

Who doesn’t need another staple grab + go breakfast idea in their routine? I know I always do! Mornings can be a chaotic time of day, especially as a Mom or parent, so feeding yourself may be at the bottom of your priorities, which is why this meal is worth a try for you! It’s packed with protein from eggs and cottage cheese, as well as a ton of veggies for fiber, nutrients and extra satiation. Feel free to use the eggs and cottage cheese as your base and switch up the veggies to any of your favorites! Hope you enjoy!

Ingredients:

  • 7 eggs

  • 2/3 cup cottage cheese (I used Good Culture, Lactose Free)

  • 1 medium white sweet potato, grated

  • 1 cup fresh spinach, chopped

  • 1/2 cup mushrooms, chopped

  • 1/2 cup red bell pepper, chopped

  • 1 teaspoon sea salt

  • 1 teaspoon paprika

  • 1/2 tsp black pepper

Instructions:

  1. Preheat the oven to 350 degrees. Lightly grease your muffin pan with EVOO and set aside.

  2. Heat a little olive oil in a pan over medium heat. Once hot, add the grated sweet potato and cook for about 5-10 minutes until potato is tender.

  3. In a large mixing bowl, add the eggs and cottage cheese and whisk to combine. Then add the salt, paprika, pepper and any other seasonings you like!

  4. Once the eggs, cottage cheese, and seasonings are mixed well, mix in the spinach, mushrooms and bell pepper.

  5. Fold in the tender grated sweet potato to your mixture.

  6. Add batter evenly into your prepared muffin pan.

  7. Bake for 17-20 minutes, until the edges are golden brown and center is cooked throughly.

  8. Store in an air-sealed container in the fridge and reheat in the microwave for 1-2 minutes to enjoy!
