Granola Bars

These tasty little bars will be your next family favorite treat! Why spend more money buying store-bought bars loaded with too many ingredients and sugar, when it’s too easy to make from home? I hope you love this recipe as much as we do!

Ingredients:

  • 2 cups GF oats

  • 2/3 cup ground flaxseed

  • 2/3 cup unsweetened shredded coconut

  • 1/2 cup mini chocolate chips

  • 1 tsp sea salt

  • 1 cup unsweetened creamy peanut butter*

  • 2/3 cup pure maple syrup

  • 1+1/2 teaspoon vanilla extract

Instructions:

  1. In a large bowl, combine the oats, flaxseed, coconut, chocolate chips, and salt. Mix well with a spatula. .

  2. In a separate bowl, whisk together the peanut butter, maple syrup and vanilla extract.

  3. Combine the wet ingredients into the dry ingredients and stir (or use hands, that’s what I did) to mix well.

  4. Line a 9x11 dish with parchment paper then pour the mixture on top of it and flatten it evenly throughout the dish. Use a small piece of parchment paper and the bottom of a glass cup to flatten the mixture more evenly.

  5. Store in refrigerator for at least 2 hours, then using a knife, cut into 24 bars.

  6. Enjoy!

*You can use any nut butter you’d like, just make sure it’s creamy!
