Granola Bars
These tasty little bars will be your next family favorite treat! Why spend more money buying store-bought bars loaded with too many ingredients and sugar, when it’s too easy to make from home? I hope you love this recipe as much as we do!
Ingredients:
- 2 cups GF oats 
- 2/3 cup ground flaxseed 
- 2/3 cup unsweetened shredded coconut 
- 1/2 cup mini chocolate chips 
- 1 tsp sea salt 
- 1 cup unsweetened creamy peanut butter* 
- 2/3 cup pure maple syrup 
- 1+1/2 teaspoon vanilla extract 
Instructions:
- In a large bowl, combine the oats, flaxseed, coconut, chocolate chips, and salt. Mix well with a spatula. . 
- In a separate bowl, whisk together the peanut butter, maple syrup and vanilla extract. 
- Combine the wet ingredients into the dry ingredients and stir (or use hands, that’s what I did) to mix well. 
- Line a 9x11 dish with parchment paper then pour the mixture on top of it and flatten it evenly throughout the dish. Use a small piece of parchment paper and the bottom of a glass cup to flatten the mixture more evenly. 
- Store in refrigerator for at least 2 hours, then using a knife, cut into 24 bars. 
- Enjoy! 
*You can use any nut butter you’d like, just make sure it’s creamy!
